<p>I absolutely adore Thai iced coffee and tea drinks.  They are the beverage I splurge and drink on special occasions.  As they are quite sweet and rich, I do not believe they are suited towards everyday drinking.</p>
<p>I found this video online today showing Thai Iced Coffee being made in Thailand.  It basically consists of:</p>
<ul>
<li>sweetened condensed milk</li>
<li>sugar</li>
<li>coffee</li>
<li>ice</li>
<li>evaporated milk</li>
</ul>
<p>The result of these ingredients is pure heaven in a cup.  I love how in this video the result of the iced coffee is served in a plastic bag.  I have not seen that done before.</p>

<p>I am an avid lover of iced coffee!  It is truly one of the most delicious and refreshing beverages in summer!  Actually, I have been known to drink quite a bit of iced coffee even in the winter.  I just love the iciness mixed with the lushness of the coffee.  Here is a great video with lots of delicious cold coffee recipes such as vanilla lattes, coffee spritzer, and shaken mocha!</p>

<p>Recently I perusing The Pioneer Woman&#8217;s site for inspiration recipes, as I often do, and came across her recipe titled &#8220;Perfect Iced Coffee&#8221;.  I know winter is swiftly coming upon us, and this an iced coffee post, but I couldn&#8217;t help myself.  It is that good and I still crave the iced goodness even during these colder months. In her post she talks about how hard it is to find that elusive cup of perfect iced coffee as often it will simply be warm coffee poured over ice &#8211; not good!  I tried her ideas on how to make a perfect iced coffee and it is divine!  I&#8217;m particularly fond of using sweetened condensed milk in mine.</p>
<p>Here is her directions on making it:</p>
<h4>Ingredients</h4>
<ul>
<li>1 pound Ground Coffee (good, Rich Roast)</li>
<li>8 quarts Cold Water</li>
<li>Half-and-half (healthy Splash Per Serving)</li>
<li>Sweetened Condensed Milk (2-3 Tablespoons Per Serving)</li>
<li>Note: Can Use Skim Milk, 2% Milk, Whole Milk, Sugar, Artificial Sweeteners, Syrups&#8230;adapt To Your Liking!</li>
</ul>
<p>(Originally adapted from Imbibe Magazine)</p>
<p>In a large container, mix ground coffee with water. Cover and allow to sit at room temperature eight hours or overnight.</p>
<p>Line a fine mesh strainer with cheesecloth and set over a pitcher or other container. Pour coffee/water mixture through the strainer, allowing all liquid to run through. Discard grounds.</p>
<p>Place coffee liquid in the fridge and allow to cool. Use as needed.</p>
<p>To make iced coffee, pack a glass full of ice cubes. Fill glass 2/3 full with coffee liquid. Add healthy splash of half-and-half. Add 2-3 tablespoons sweetened condensed milk (can use plain sugar instead) and stir to combine. Taste and adjust half-and-half and/or sweetened condensed milk as needed.</p>

<p>While many coffees taste great chilled, Carroll recommends high-quality specialty coffees like Kenya or African Kitamu from Starbucks. Both coffees make a wonderful option for serving cold because hints of citrus and floral notes become more pronounced when iced, and pair beautifully with favorite summertime treats.</p>
<p>African coffees are especially good over ice, with crisp, caramel notes that pair perfectly with fresh berries or a moist lemon pound cake.</p>
<p>After selecting your favorite coffee, brewing the perfect cup of iced coffee at home for guests is easy. To experience the complex flavors of the coffee, Carroll offers these simple steps to brew iced coffee to perfection at home:</p>
<p>* Brew coffee double strength, using one cup (2.5 ounces) of ground coffee to three cups of filtered water (24 ounces), in a coffee press to allow the coffee’s complex flavors to shine through.</p>
<p>* After brewing is complete, pour the coffee into a large pitcher, adding three cups of ice and let it cool.</p>
<p>* Serve the coffee in a tall glass over ice and sweeten to taste.</p>

Makes four Servings</p>
<p>Ingredients:<br />
1 cup (2.5 ounces) Kenya or Africa Kitamu ground coffee<br />
3 cups (24 fluid ounces/710 milliliter) filtered water<br />
1 cup (eight fluid ounce/236 milliliter) cold milk<br />
Classic syrup</p>
<p>Directions:</p>
<p>Brew the coffee double strength using one cup of ground coffee to three cups of water. After brewing is complete, pour the coffee into a pitcher or carafe. Add three cups of ice to the pitcher and let cool. Fill four tall glasses halfway with ice. Pour 1/2 cup (four ounces) iced coffee over ice. Add 1/4 cup (2 fluid ounces/59 milliliters) cold milk to each glass. Sweeten to taste with classic syrup.</p>
<p><strong>Citrus Iced Coffee</strong><br />
Tangy, tasty and tantalizing &#8212; a perfect afternoon drink.<br />
Makes four servings</p>
<p>Ingredients:</p>
<p>1 cup (2.5 ounces) Kenya or African Kitamu ground coffee<br />
3 cups (24 fluid ounces/710 milliliter) filtered water<br />
1 orange sliced into thin wedges<br />
1 lime sliced into thin wedges<br />
Classic syrup</p>
<p>Directions:</p>
<p>Brew coffee double strength, using one cup of ground coffee to three cups of water. After brewing is complete, pour coffee into a pitcher or carafe. Add orange and lime wedges (put aside enough lime wedges to garnish glasses). Add three cups of ice to the pitcher and let cool. Serve in a tall glass filled halfway with ice and garnish with lime wedge. Sweeten to taste with classic syrup.</p>
